Wild or perennial rye (Waldstaudenroggen) is an old rye variety, also called primal rye or Siberian rye.
The grains are polished, which means that part of the husk (spelt) is removed. As it is a whole grain product, the cooking time is 45-50 minutes. Pre-swelling can shorten the cooking time.
Very aromatic and nutty in flavour, this grain is suitable as a side dish, for fried rice or a rice salad.
