Vialone Nano, or unpolished round-grain dwarf rice, is grown in the area around Verona. It has a medium-sized, slightly darker, rough grain that increases in volume by at least double to triple when cooked. Its flavour, cooking resistance and high starch content, which is released during cooking, make the Vialone Nano unique. This rice is grown exclusively around Verona and has the IGP protected designation of origin.
