Apple verjus, also known as agrest or green juice, is the juice from unripe apples. With its fresh acidity and the typical flavor of green apples, this verjus is the perfect seasoning for sauces, salads, as a substitute for wine in various dishes, or even for desserts.
The 200-year-old Mausacker organic farm is located between Lake Constance and St. Gallen, in the “Fruit Garden of Mostindien.” 500 high-stem trees shape life on the farm, and the juice is usually bottled on-site within half a day. Mausacker combines traditional pressing methods with modern equipment. Since 2018, the farm has been certified for contract processing according to Bio Suisse Knospe and Demeter standards.
