Rediscovered bean (actually seed) from the fruit of the tonka tree. Due to its fine, vanilla-like nuances, it is well suited for desserts of all kinds, with fruits, compotes, jams, etc… Also an experience in savoury cuisine. The caramel-like aroma harmonises very well with veal, fish or seafood. In a complex process, the bean is ground under vacuum at -40C° and thus retains the full aroma. Use in moderation.
