Timut is related to the Szechuan pepper. We obtain this wild-growing pepper from a project in northern Nepal. This is harvested by hand, gently dried and very cleanly sorted. Only the brownish capsule freed from the seeds is used as a spice. Characteristic is the fresh-spicy taste, which causes a feeling of numbness on lips and tongue. This spiciness is somewhat more subtle than that of Szechuan pepper.
The taste is fresh, fruity, but also floral notes are recognizable and make this pepper an amazing experience. Fits perfectly to strong fish, seafood, but also to fruits or chocolate.
