Szechuan pepper, also known as aniseed pepper or Chinese pepper, is a rhombic plant and not an actual pepper. As its name suggests, it originally comes from central China, but is now cultivated throughout Asia. Only the seedless capsule is used as a spice. Compared to red Szechuan pepper, green Szechuan pepper has a somewhat milder pungency and a fresher and more intense citrus flavour with nuances of grapefruit. The tingling sensation with a slightly numbing effect on the tongue is known as “má” in Chinese and differs from ordinary spiciness.
Szechuan pepper is an important component of oriental cuisine and the Chinese “Five Spice” spice blend. A pinch of freshly ground green Szechuan pepper gives meat, fish, desserts with dark chocolate or exotic fruit salad a special, fresh, lemony flavour.
