Sichuan pepper, also known as Szechuan pepper, Chinese prickly ash, Chinese pepper or Mountain pepper, is a rhombic plant and not an actual pepper. Originally from central China, it is now cultivated throughout Asia. Only the capsule, with the seeds removed, is used as a spice. The characteristic tingling sensation, which has a slightly anaesthetic effect on the tongue, is called “má” in Chinese and differs significantly from the usual pungency.
Red Szechuan pepper is characterised by a warm, slightly lemony and floral taste and is one of the main ingredients in the “Five spice” blend. It is an excellent accompaniment to grilled meat as well as bean, tofu or vegetable stews. If it is used as a whole peppercorn, biting into a grain provides an intense flavour experience. Alternatively, the grains can be ground into powder and added either during cooking or as a garnish.
