Miso is a Japanese spice paste and is basically made from fermented soybeans with varying amounts of rice, barley, other grains or pseudo-grains and table salt. For this miso from Patrick Marxer’s “Das Pure” in Wetzikon, Swiss mushrooms were used instead of soybeans.
In terms of taste, it belongs to the umami category. Salty and flavourful, it can be used for soups or as an essence for salad dressings, sauces or fried tofu.
