Miso is a Japanese spice paste and is basically made from fermented soybeans with varying amounts of rice, barley, other grains or pseudocereals and table salt. For this miso from Patrick Marxer’s “Das Pure” in Wetzikon, Swiss Borlotti beans were used instead of soybeans.
In terms of taste, it belongs to the umami category. Salty and aromatic, it can be used as an essence for soups, salad dressings, sauce or baked tofu.
