Rich, dark chocolate made from Forastero cocoa beans from Semuliki, Uganda. The subtle acidity with lightly roasted hazelnut notes somewhat conceal the 85% cocoa content.
In the cooperatives, farmers are offered seeds or new seedlings from existing trees to replace trees or expand their plantation. These are often between 1 and 3 hectares in size. In order to offer the cocoa farmers a certain degree of security, long-term supply contracts are concluded over a period of years. This also promotes organic farming and ensures a certain income. The cooperatives provide the farmers with training, insurance and small loans.
Now in its fourth generation, the Schell family runs a hotel, confectionery and café in Gundelsheim, Baden-Württemberg. With the aim of bringing out quality, transparency, fairness and the best flavours from the cocoa beans, Schell recently decided to no longer be “just” a confectioner, but to produce from bean to bar. We are happy about this; the chocolates are great.
