This 100% chocolate bar is made from the Virunga cocoa variety with no added sugar. The hand-sorted organic cocoa is fermented for seven days in the tropical jungles of the Congo.
Notes of red sour cherries, vanilla and spices characterise this bar, which goes excellently with a sweet dessert wine like port wine or an Amarone.
Now in its fourth generation, the Schell family runs a hotel, confectionery and café in Gundelsheim, Baden-Württemberg. With the aim of bringing out quality, transparency, fairness and the best flavours from the cocoa beans, Schell recently decided to no longer be “just” a confectioner, but to produce from bean to bar.
