The cacao for this chocolate grows in the wooded and hilly area of Kaithapara, in Kerala. This area is known for its spices and the savoury taste is also reflected in the chocolate. The light sweetness combined with a fine acidity give this chocolate bar its very own character.
Millésime Chocolat is a Belgian manufacturer of organic chocolate bean to bar. The founder, Jean-Christophe Hubert, focuses on the processing of raw cacao beans, from roasting to the production of the final products, respecting manufacturing processes of the past.
As with wine, Millésime only processes beans from exceptional plantations and soils to highlight their characteristics. They do not mix harvests, regions or vintages, and all their production is certified organic. This results in wonderful chocolates full of character, but only in limited quantities.
