Most of the harvest from Madagascar is processed into green pepper. But there is also this beautiful black pepper that grows in the region of Bejofo. It has an irregular, medium-sized grain, dark brown to black in colour. Since the grains are not too hard, they break easily in the mortar with only light pressure applied. Fresh and strong flavours are released. The palate is dominated by a strong flavour with slight bitterness. Fine resin tones remain noticeable for a long time.
