Mace, or macis, is the red seed coat that encloses the nutmeg like a net. Similar in taste to nutmeg, mace also has a sweet nuance. This ground spice is often used in Christmas spice mixtures, but is also wonderful in pumpkin soups, curries, chutneys, preserved fruits and carrot cakes.
