Fast dried – with a little more acidity than Belize 70% slow dried.
This chocolate is slightly softer in the break. The velvety mouthfeel is accompanied by a fresh citrus note that lingers long on the palate. The fine cocoa comes from Belize, from the Toledo region in the south of the country and is organically grown by Mopan Maya farmers not far from the village of San Jose and expertly fermented and dried on site by the company Belyzium.
In the wetter harvest season, the cacao cannot be dried in the sun, so it is dried mechanically. It thus dries faster than in the sun and develops a somewhat fresher, more concise acidity.
Since autumn 2018, the South Tyrolean manufactory Karuna has been producing wonderful chocolates. Katja and Armin, the founders, give high priority on ethically traded and organically grown fine cocoa. For sweetening, they use Fairtrade raw cane sugar from Brazil. The organic cocoa butter is pressed from Nacional Arriba cocoa from the area around Los Rios and Esmeraldas in Equador. The almonds and fruits used are also organically produced. The packaging is also completely organic.
