The rice grains are harvested when they are still soft. They are then flattened by hand from the panicle and dried in the sun. In this state of maturity, the sugar has not yet been converted into starch, so that this rice cooks very quickly. Green rice (Grüner Reis) can be used as sweet rice or for breading fish and vegetables. However, one of the most delicious variations is to deep fry green rice in a little fresh butter for about 4 to 5 minutes.
In the past, the rice was dyed with food coloring, giving it a bright green color. Today, we source the rice naturally. The fine green of the fresh rice grains turns yellow due to the sun-drying process – YELLOW rice would actually be the more appropriate name.
