Fregola is the traditional and characteristic pasta speciality of Sardinia. What makes it special is that after being made with durum wheat (senatore cappelli) and water, the pasta undergoes a baking process. The pasta dough is shaped to form small balls the size of peppercorns. Fregola gets its characteristic colour and flavour from baking in the oven. This production process comes from the Sardinian tradition of producing food at home.
“Senatore Cappelli” is the name of the durum wheat variety. This is the king variety, this wheat reaches a height of almost 2 meters and is therefore susceptible to strong winds and rains. However, in terms of taste, it is one of the best durum wheat varieties around.
