This cardamom is a wild form native to the tropical cardamom forests of Cambodia. The pickers harvest each flower when it is fully ripe. The pods are dried in a smokehouse and the seeds are extracted. Thanks to careful hand harvesting and gentle drying, it retains its fresh, ethereal aroma and exceptional colour.
The taste is fresh and aromatic with notes of eucalyptus, menthol and camphor intensified by the smoke. Goes perfectly with Indian-Nepalese cuisine such as vegetable stews, curry dishes, with strong meat or on fennel salad. The whole seeds can be cooked with the dish or crushed with a mortar.
