The cocoa beans, which grow on the volcanic island of Karkar, are incomparable in taste and give the chocolate special notes of walnuts and wild mushrooms in the foreground, with a hint of truffle in the finish.
Firetree was founded in 2017 by David Zulman, Martyn O’Dare and Aidan Bishop. Taking advantage of their experience in the chocolate industry, they now produce small batches of single-origin chocolates. The cocoa used comes from islands of volcanic origin around the Pacific fire belt. This, and the fact that a cacao tree full of ripe, bright red, yellow and orange pods can also look like it is on fire, led to the name “Firetree”.
