Wild fennel pollen has a sweet, elegant pine note that accompanies the fennel flavour wonderfully and makes it as unique as it is distinctive. The pollen is excellent with fish, veal, lamb, poultry, game, soups, sauces, pasta, risotto, tomatoes, vegetable dishes, salads and cheese. They can also be used for desserts such as sweet creams, cakes, sorbets, fruit, ice cream and much more. However, wild fennel pollen does not tolerate long cooking times and should therefore only be used at the end.
