A narrow, wide cavity, a lacy texture, its oblique cut: three elements that make spelt wheat stand out and invite unusual, bold combinations with unusual, strongly flavoured ingredients.
Farro (spelt) has been used for thousands of years, since the ancient days of the Celts, Egyptians and Etruscans. Skilled pasta makers use Italian organic dicoccum spelt and know how to make the most of it. While cooking, this pasta gives off an unmistakable aroma of fresh hazelnuts and grilled aubergine. It feels firm and slightly crunchy, reminiscent of a bread crust, tastes richly of peanut butter and has a mild aftertaste of jujube.
Also try the Kamut Khorasan and il Cappelli varieties.
