Farina bóna is a traditional product of the Valle Onsernone in Ticino. It is a gluten-free corn flour obtained by the very fine grinding of roasted corn kernels.
It can be used as a supplement to white flour for all kinds of pastries (1/4 of the amount of flour with Farina bona), for crêpes, in natural yoghurt and curd, in spaetzli, as a binder for salad dressings or for breading fish and meat instead of cornflour.
