This classic dark flour, known in Switzerland as “Ruchmehl”, is suitable for dark, rich and aromatic breads with a dark crumb. The degree of milling of dark flour is closer to that of wholemeal flour, which means that it contains quite a lot of edge particles from the grain. This has a positive effect on the taste and the components.
The Tschudi family has been running the Altbachmühle in Wittnau (Fricktal) since 1760, now in its 8th and 9th generation. The grain is delivered directly from the fields by regional farmers. No additives are added to the various flours – Swiss quality, natural and easily digestible.
