The Elvesia plantation on the Samana peninsula in the Dominican Republic was founded around 200 years ago. Still under Swiss ownership, the best Trinitario and Criollo cocoa are grown there under organic conditions. The dark couverture produced from this excellent cocoa is characterised by its strong cocoa flavour, notes of black tea and tobacco and a slightly fruity nuance.
