High-quality couveture (chocolate wafers) for the preparation and coating of cakes, pastries, pralines, chocolate bars, ganache and creams.
This chocolate is made from the unique and rare wild cacao “Criollo Amazonico” from the province of Beni, in the lowlands of Bolivia. The collectors, mostly Chimane Indians, search out the widely scattered “cacao islands”, cut the ripe fruits from the trees and bring them by horse or dugout canoe to the collection point. There they are carefully fermented and then dried in the sun. For the rest of the year, the trees are left to nature, i.e. they are neither fertilised nor cut.
The rich, harmonious cocoa flavour is complemented by the freshness of lemon and the fruitiness of grapefruit. The traditional production process accentuates the bouquet of prunes and vanilla.
