Our Corbezzolo honey with its unique bitter taste comes from the south of Sardinia. The Corbezzolo, also called strawberry tree, thrives on the Thyrrenian coast. Its fruits are bright red and blossom in the period from November to February. Their taste is rather bland with a slight sweetness. The yield of this honey speciality is very low because of the cold harvest time, hence the high price.
Typical is its bittersweet aroma, which is unique. This honey is said to have a particularly health-promoting effect. This honey is excellent paired with sheep’s cheese (Pecorino) or in combination with strong meats.
As our honeys are natural, they crystallize over time. For this reason, the color and consistency may differ from the picture. You can liquefy the honey again by heating it slowly in a water bath.
