Fazenda São Silvestre is located in the south-east of Brazil, in the mountains of Minas Gerais at an altitude of around 1200 metres. One of the best Arabica coffees in Brazil grows here on fertile volcanic soil. Ismael Andrade and his son Rômulo attach great importance to sustainability and the conservation of valuable resources. No chemical fertilisers are used and a specially developed treatment process saves half of the water otherwise required. Speciality coffee is grown on the approximately 250-hectare coffee plantation, which regularly receives top marks at international tastings.
The purchased batch consists of coffee beans of the Yellow Catuai variety, which are subjected to a special process known as “natural aerobic fermentation”. The ripe coffee cherries are carefully selected at various stages and fermented in large, open tanks at 24°C for around 72 hours. The whole cherries are then slowly dried for 22 days. The controlled fermentation and slow drying ensure a unique, full-bodied flavour profile.
We do not roast this coffee too dark so that the complex and characterful flavour can develop optimally.
