Los Bejucos is located in the central part of the Dominican Republic. This cocoa is harvested by small producers in the region and then fermented and dried on the Esmeralda estate. A fine acidity with notes of cassis determines the aroma of this chocolate. Toasted almonds and memories of dark brownies dominate the taste, which lasts wonderfully long.
“Casa Cacao” is more than just a manufactory for exceptional chocolate – it is also a hotel and café. In Girona, near Barcelona, Jordi Roca and his team have been producing exquisite chocolates since 2018. Casa Cacao sources the cocoa directly from the producers and endeavours to reflect the full richness of a cocoa bean in its chocolates. “Each origin, each producer, each batch, each production shows one of the thousand faces that make up the life of cocoa: the soil in which it has grown, the climate that has determined its life, the producer’s work on the soil and on the plant, or the different processing after harvesting, especially during the fermentation and drying phases.”
