Aceto Balsamico originates from the Modena region in Emilia Romagna. Unlike regular vinegar, it is made from cooked grape must. Despite its dark color, it is often crafted from white Trebbiano grapes and red Lambrusco grapes.
Its unique flavor develops through aging in wooden barrels made from various woods such as oak, cherry, chestnut, ash, juniper, and mulberry. The natural fluctuations in temperature and humidity are used to promote evaporation, concentrating the sweetness and flavor.
