This pepper specialty comes from northern Sumatra, Indonesia. Related to the Szechuan pepper, this is not cultivable. It grows wild in various regions of the Far East.
Handpicked, harvested in the jungle, the tendrils are dried in the Indonesian sun in reed baskets, where the Andaliman loses almost 90% of its weight.
The Andaliman pepper surprises with a slightly tingling and numbing, very intense citrus note. The flow of saliva is strongly stimulated by this spice, so that all foods are perceived more intensely as a result.
Goes very well with fish, seafood or poultry. But also for stews and soups.
