Allspice, also known as Jamaica pepper, myrtle pepper or piment, is very aromatic and has a taste reminiscent of nutmeg, cinnamon, pepper and cloves with a fresh woody note and medium spiciness. Allspice is used in stews, soups, Asian dishes, compotes, in Christmas biscuits such as gingerbread or for spice cakes.
The whole grains can be added to stews and are suitable for longer cooking times. Crushed in a mortar, they develop a more intense aroma and are suitable for seasoning or baking.
