Ajwain is a South Indian spice that is related to cumin, but tastes more like thyme. It has a distinctive pungency and slight bitterness, which are softened during cooking. The seeds unfold their full aroma when crushed in a mortar.
Ajwain is excellent in vegetable stews, oriental pilafs, with pulses, pickles and grilled meat, chicken or fish dishes. As whole grains, they can be sprinkled over pita bread and on savoury pastries before baking.
