“Zopf” flour is a white wheat flour enriched with spelt. This gives it a higher proportion of elastic adhesive protein (gluten) and makes it easier to braid and shape.
The Tschudi family has been running the Altbachmühle in Wittnau (Fricktal) since 1760, now in its 8th and 9th generation. The grain is delivered directly from the fields by regional farmers. No additives are added to the various flours – Swiss quality, natural and easily digestible.
