Among the countless varieties of lentils, the Beluga or caviar lentils, along with the French Puy lentils, are two of the preferred varieties of world-class gastronomyy. This preferance is because, unlike many other lentils, they retain their bite even after cooking. These organic Beluga lentils are excellent as a side dish with fish, for a lentil salad or in stews and Indian curries.
Lentils do not need to be soaked.
