Sweet, Cambodian cinnamon from the bark of the Cassia cinnamon tree – the most aromatic cinnamon of all! It is harvested before being dried in the sun. Exceptionally high essential oil content (7%). Cassia cinnamon is obtained from mature cinnamon trees. The bark is thicker than that of the finer rolled young Ceylon cinnamon. Cassia cinnamon has a higher coumarin content, a natural, aromatic plant substance which also occurs in woodruff or tonka bean.
The sweet, earthy taste goes well with Christmas cookies, cakes, but also with Indian meat dishes, orange salads, compotes, tajines, pastillas and stews.
