The cacao for Don Maximo’s Quest chocolate comes from the Bellavista plantation. The owner Don Máximo ferments and dries his cocoa beans himself and likes to experiment with different methods and cocoa varieties.
On the palate, this chocolate is reminiscent of almonds, cedar, fine woody notes with a slight astringency reminiscent of pecans.
Since 2016, Elfi and Maxime have been producing high-quality chocolates in Montreal from the best, directly purchased Peruvian cocoa.
