This 3-year-old balsamic is perfect for salads. Its full aroma with a distinct sweet and sour character is also excellent with vegetables and for seasoning and refining sauces.
Aceto Balsamico comes from the region around Modena, in Emilia Romagna. Unlike conventional vinegar, Balsamico is made from cooked grape must. Despite its dark colour, it is partly made from the white Trebbiano grape and the red Lambrusco. Balsamico gets its incomparable aroma from being stored in wooden barrels of various woods such as oak, cherry, chestnut, ash, juniper or mulberry. The variation in temperature and humidity is exploited for evaporation and thickening (concentration of sweetness and flavour).
