Real star anise tastes persistently sweet and liquorice-like, but also a little peppery and sour.
Star anise is used for pastries – especially for Christmas baking. Apple, pear and plum puree, puddings and compotes taste even better when star anise is added.
In black tea, mulled wine and hot grog, star anise unfolds its sweet and spicy aroma.
Star anise is also particularly well known from the Chinese “Five-Spice” spice mixture. The flavour develops best when slowcooked in a stew or dry-roasted for a short time before grinding.
